I've been on a mission lately to make a really good from-scratch chocolate cupcake. I have been reading and studying Understanding Baking: The Art and Science of Baking and it has sparked a fire in me! I'm in the kitchen working on new recipes and I absolutely love it! There’s something about being in the kitchen late at night baking with my favorite Alexa station (chill electronic) playing that is soooo stress relieving!
I didn't actually set out to make a chocolate chip cookie dough cupcake, but, when I topped my double chocolate cupcake with my brown sugar buttercream frosting something magical happened. My taste tester (my husband) took one bite and said that it tasted just like chocolate chip cookie dough. He was right!
The Chocolate Chip Cookie Dough Cupcake was born! It's light, fluffy and tender with all the flavor of delicious, scrumptious cookie dough without all the risk! As good as raw cookie dough is, it's really not worth the risk of getting food poisoning, am I right?!?
Oh, by the way, today is national chocolate chip cookie day! What better way to celebrate than these cupcakes!?
